So on Thursday night, hubby came home from work to announce that there was some scheduling conflict at work and they switched his days off, thus resulting in a few unexpected days off! We were 100% fine with that, of course (hello!). He asked me what I thought of a day trip to Scottsdale and Phoenix the next day. Did he have to twist my arm? I think not.
We walked around Old Town, went to the gorgeous shopping mall, visited Glendale, Chandler, and Tempe, and went to downtown Phoenix. Oh, and how can I forget lunch? We stumbled upon an outdoor eatery called Stax Burger Bistro. I had the Veggie Burger (quinoa black bean patty topped with guacamole and pico de gallo on mini bun). And Joshua got the Wagyu (Kobe beef patty, topped with bleu cheese, asparagus tips and spicy ketchup on mini bun) and a side of Mac 'n Jack, homemade macaroni & cheese made with pepper jack cheese. Yummmm.
Such a fun day with my love. And Hartley, of course.
