[ A Guy Called Sam... ]

... can change your life, people!

I love this cookbook from "Sam the Cooking Guy" (from my hometown of San Diego, CA, holla!). For all of you foodies out there, I know what you're thing.. "Yeah, yeah... did this guy even go to culinary school?" The answer is no. He just so happens to be a guy who has a passion for his thing and doesn't give in to the gimmicks... his philosophy is "big in taste and small in effort." I don't know about you, but I'm married to a meat and potatoes man. I eat the "healthy" stuff for breakfast and lunch when he's at work and usually enjoy the "bad" stuff (I mean, good stuff-- pasta, burgers, you name it) with him for dinner when he's home. He doesn't do the whole gluten-free, so-healthy-you-don't-even-know-what-it-is thing, you get me? He is active all day anyway, so it doesn't stick to him. Oh, those boys!


A little something I have to get out of my system and then I won't bring it up again....
When it comes to food, I always remind myself of my mom and all of nutrition wisdom she gave me over the years (Master's Degree in Nutition from SDSU, go mama!): "Everything in moderation... deny yourself anything and you'll end up eating it in excess." Isn't she wise??! Don't get me wrong... I 100% agree that exercise and eating healthfully is imperative to a healthy and vibrant life. However, life is too short to not enjoy the good stuff every once in awhile, friends! Pasta and wine? Yes please. And dinner in under 20 min? Just my style. Thanks, Sam. So go ahead and enjoy this tasty, probably-not-so-good-for-you-but-who-cares-so-easy-it-barely-feels-like-work! recipe :) You're half way through the week!

Lemon Pasta with Mint

1 lb pasta (whatever kinda pasta you like, people)
4 tbsp. (1/2 stick) butter
Juice of 1 lemon, plus the grated zest (see you're getting a fruit in there!)
Kosher salt and freshly ground black pepper
Grated Parmesan cheese
3 tbsp. finely chopped fresh mint

Directions: In a large pot of boiling water, cook the pasta according to the directions. When the pasta is almost done, melt the butter in a medium pot with the lemon juice and mix well. Drain the pasta and put in the pot with the butter and lemon juice and add salt and pepper to taste. Toss everything together. Put on serving plates and top each with some Parmesan, a little lemon zest, and the mint. Enjoy!


P.S. And just remember... Bill Gates, Steve Jobs, and Mark Zuckerberg were all college drop outs. You don't have to have a formal education in any arena to not make an impact, chase a passion, or become a success. So don't judge my friend Sam here. A lesson for us all. Just my little soap box message of the day :) Ha ha ha ha. Ha.
